Brioche Bun – 4 Ea.
Z’atar Seasoning – 2 tbsp.
Melted Butter – 1 tbsp.
1/8” Thick Slices Havarti Cheese – 8 Ea.
Mustard Jam – 8 tbsp. (See Recipe Below)
4oz Lamb Burger Patties From Farm Field Table – 8 Ea.
Arugula – 2 Cups.
Mustard Jam: (Recipe will yield roughly 1 qt. Extra jam can be stored in your refrigerator for up to 3 weeks)
Spanish Onion – 6 Ea (1/4” dice)
Sugar – 1 Cup
Dijon Mustard – 1 Cup
Honey – 2 tbsp
Yellow Mustard Seed – 4 tbsp
Brown Mustard Seed – 4 tbsp
Flat Leaf Parsley – 1 Bunch (Chopped)
Mint – 1 Bunch (Chopped)
In a medium sized sauce pot, add 2 cups of sugar and place over low heat, stirring constantly to ensure sugar caramelizes but does not darken beyond a light-amber. Once all sugar is melted and becomes light-amber in color, slowly stir in the diced onions. It is imperative that the onions be stirred in slowly to prevent the caramel from seizing. Once the onions are added and the mixture calms down to a low simmer, add the honey, dijon, and the yellow and brown mustard seeds. Allow all ingredients to simmer for 4 min and then remove from heat. Allow to cool to room temp, then stir in the chopped Mint and Parsley.
Preheat oven to 250o F. Slice all 4 buns in half and brush melted butter on the cut side of all halves. Also brush the top of each bun with melted butter and sprinkle tops with Z’atar seasoning. Bake all halves cut side down for 4 min.
Preheat chargrill on High for 15 min. Season each patty on both sides with salt and
pepper. Place burgers on chargrill. Allow first side to char for 90-120 seconds or until a nice crust forms on the bottom. Flip each patty and immediately top each patty with a slice of Havarti. Continue to char patties for an additional 2 min, allowing cheese to melt. Stack burgers in stacks of 2, remove from grill and allow to rest on a wire rack for 1 min. While burgers are resting, spread 1 tbsp. of mustard jam on all cut sides of each bun. Distribute arugula evenly over the tops of all 4 stacks of patties. Place each stack of burger patties on its own bottom bun and place top bun over each arugula covered patty stack. Lick your lips, and enjoy!
